fix: remove python2 dependency for Ubuntu 26.04+ compatibility
Ubuntu 26.04 no longer provides the 'python' package (Python 2). Replace with python-is-python3 which creates the symlink for scripts using '#!/usr/bin/env python'. Keep python3 for runtime.
