Align .gitea/workflows/*.yaml SHA hashes to match the htpasswd reference pattern.

Fixes action SHA pinning for:

  • actions/checkout
  • docker/setup-buildx-action
  • docker/login-action
  • docker/metadata-action
  • docker/build-push-action
  • anothrNick/github-tag-action
